Yesterday I made an omelette. My first time ever! I wasn’t sure how to do it, so I completely improvised. Being a student, this can be dangerous..but it turned out so well that I’m even writing about it.

I’ve been to lots of hotels, where, at the breakfast buffet, they make your omelette for you in front of you. This is the most common method that they use:

1. First they make sure that the hot plate in front of them is greased, usually with oil, I’m not sure what type.
2. They normally have a huge bucket-full of beaten egg, so, if making it this way at home, beat the eggs into a bowl or something.
3. It is then up to you to choose your selection of fillings. Some options are (but make sure they are all diced quite finely):

Onions
Cheese
Red/Green Peppers (Capsicum)
Mushrooms
Tomatoes
Sausage
Anything you have in the kitchen that you think will go with an omelette.
4. They then take a ladle n spoon some of the beaten egg onto the hotplate (i have no idea what temperature they put it at).
5. After a few seconds, they will take the selection of fillings you have chosen n put this on top of the liquidy egg that is already starting to cook.
6. They cook it like this for a minute or so, and then they fold the omelette in half, cook it for another minute or so, and then it’s done!
However, because I had no idea what heat to put it on or the exact times to cook it for, I didn’t want to follow that ‘recipe’ that strictly. I also half remembered how my mother used to make omelettes, and so I decided to just try to combine the two methods. So now here is mine:
Ingredients

1. Red Onion – 1/3, diced
2. Eggs – 2
3. Milk – A splash
4. Grated Mozzarella Cheese – 2 handfuls
5. Butter – 1 tbl
6. Chilli Flakes (optional)
7. Dried Mixed Herbs (optional)
Method

1. Crack both eggs into a bowl n beat them fully.
2. Add the diced red onion and mix.
3. Add a splash of milk, and the cheese, and mix again.
4. Heat the frying pan on the stove at about a medium heat.
5. Heat the butter in the pan, and, when melted, add the omelette mixture.
6. Increase the heat slightly, but do not make it too hot, n cook the omelette for about 2 1/2 minutes. Add chilli flakes, mixed herbs, and salt + pepper to taste.
7. Keep checking the underside of the omelette and when it goes a nice golden/brown colour, fold the omelette in half but keep it in the pan.
8. Cook for about another minute, or when you feel that it is not liquidy anymore as it has all been cooked.
9. Take it out of the pan, trying your best not to break it, and serve immediately.
Please remember, this is definitely not a completely reliable recipe on how to cook an omelette. All i know, is that it worked for me, and it tasted really good, so if you want to give it a go, have fun.
